Crazy Cake



Ingredients:
1 1/2 c. of all-purpose flour
3 T. of unsweetened cocoa
1 c. of white sugar
1 tsp. of baking soda
1/2 tsp. of salt

1 tsp. of white vinegar
1 tsp. of pure vanilla extract
5 T. of vegetable oil
1 c. of water


Directions:

Preheat oven to 350°.
Mix first 5 dry ingredients in a greased 8" square baking pan.
Make 3 depressions in dry ingredients - two small, one larger
Pour vinegar in one depression, vanilla in the other and the vegetable oil in the third larger depression.  
Pour water over all.  
Mix well until smooth.
Bake on middle rack of oven for 35 minutes.  Check with toothpick to make sure it comes out clean.  Cool.
Add frosting.


Whipped Frosting




Ingredients:
For 5 c.

3 large egg whites
3/4 c. of sugar
Pinch of salt
1/3 c. of water
1/4 tsp. of pure vanilla extract


Directions:

In a heatproof bowl set over (not in) a saucepan of simmering water, combine egg whites, sugar, salt, and water. Cook over medium, stirring constantly, until sugar has dissolved (or mixture registers 150 degrees on an instant-read thermometer), 2 to 3 minutes.
Transfer to a large bowl.
Using an electric mixer, beat on medium-high until glossy, stiff peaks form (do not overbeat), about 3 minutes; reduce speed to low, add vanilla extract, and beat just until combined.
Use immediately.

Homemade Chocolate Candy




Ingredients:
For 7 dozen

1/2 c. of coconut oil
1/2 c. of real maple syrup
1/2 c. of organic cocoa powder
1 tsp. of organic vanilla
1/2 tsp. of sea salt

Directions:

Melt together gently in a saucepan over low heat until it’s all mixed together.
Put parchment paper on a few cookie sheets and drop quarter-sized candies onto them.
Put them in the freezer for a while before serving.

Rice Krispie Treats



Ingredients:
For 12 servings

3 T. of butter or margarine
1 package (10 oz., about 40) of regular marshmallows
- OR -
4 c. of miniature marshmallows
6 c. of Rice Krispies cereal


Directions:

  1. In a large saucepan, melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
  2. Add the cereal. Stir until well coated.
  3. Using a buttered spatula or wax paper evenly press mixture into 13x9x2 inch pan coated with cooking spray. Cool.


Microwave Directions:

In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 2 and 3 above. Microwave cooking times may vary.

Rolled Sugar Cookies


The Best Rolled Sugar Cookies Recipe

Ingredients:
For 5 dozen cookies


1 ½  c. of butter, softened
2 c. of white sugar
4 eggs
1 tsp. of vanilla extract
5 c. of all-purpose flour
2 tsp. of baking powder
1 tsp. of salt

Directions:

In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
Preheat oven to 400°. Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
Bake 6-8 minutes in preheated oven. Cool completely.

Cool & Easy Pie

COOL 'N EASY Pie recipe


Ingredients:
For 8 servings

⅔ c. of boiling water
1 pkg. (3 oz.) of JELL-O Strawberry Flavor Gelatin
Ice cubes
½ c. of  cold water
1 tub  (8 oz.) Whipped Topping, thawed
1 Graham Pie Crust (6 oz.)


Directions:

Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved.
Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice.
Whisk in Whipped Topping until blended.
Refrigerate 15 to 20 min. or until mixture is thick enough to mound.
Spoon into crust.
Refrigerate for 4 hours or until firm.

Guilt Free Apple Dessert

Ingredients:
For 1 serving

1 apple
¼ c. of water
Optional: cinnamon (seasoned to personal tastes)

Directions:
Cut an apple into slices.
Put slices into a microwave-safe bowl and add ¼ c of water.
Cover and microwave for about 2 minutes.
*Add cinnamon if desired.

Easy Applesauce Cake


Ingredients:
1 box of yellow cake mix
1 can of apple sauce
½ c. of corn oil
1 tsp. of vanilla

Directions:
Mix ingredients in an electric mixer.
Pour into a greased and floured bundt pan.
Cook at 350° for about 40 minutes.

Iced Mocha Fusion Shake





Ingredients:

for 2 servings

1½ c. of milk

tsp. of vanilla extract  
1/4 c. and 2 T. of granulated sugar
1/4 c. and 2 T. of mocha flavored instant coffee mix
2 c. of crushed ice


Directions:



  1. In a blender or food processor, combine milk, vanilla, sugar, coffee powder and crushed ice.
  2. Blend until smooth. 
  3. Pour into glasses and serve.

Cake Mix Cookies



Ingredients:

For about 15 cookies

18 oz. package of cake mix (any flavor)
*if using chocolate cake mix, add 2 T. of water and an extra egg*
(We accidentally missed this step, but they still turned out great)
1/2 c. of butter, softened
1 egg

Directions:

1. Preheat oven to 350°.  
2. Mix all ingredients at low speed until the dry ingredients are moistened and dough is thoroughly mixed. 
3. Drop dough 2" apart by rounded T onto ungreased cookie sheet(s) 
4. Bake at 350° for 9-12 minutes.
5. Let cool 2 minutes on cookie sheets, then move to wire racks.

Store tightly covered at room temperature so they stay soft.
You can stir in chocolate chips, coated candy pieces, chopped nuts, or oatmeal.
You can frost the cookies using canned frosting.

Oreo's Lumps of Coal Cookies

Ingredients:

For about 12 cookies

1 bag of Oreo's (16 oz.)
1 bag of large marshmallows (10 oz.)
4 T. of butter

Directions:

1. Butter a piece of wax paper and use it to line an 8x8 pan.
2. Pulse the cookies in a food processor until ground.
3. Melt the butter and marshmallows together in the microwave for about 2 minutes. 
4. Mix in the ground Oreo's until combined.
5. Put the mixture into the 8x8 pan and use a buttered spoon or spatula to flatten.
6. Let it set for 10 minutes.
 (You can mold them into lumps or cut them into squares)
